Citrus and Honey Chicken Traybake

This is a recipe that we do when we don't have the energy for anything complicated and are craving something comforting, sweet and zesty.

Ingredients:

  • 5-6 chicken thighs
  • 5 shallots, halved
  • 6-8 baby potatoes, halved
  • A few thyme sprigs

For the marinade:

Method

  1. Preheat a fan oven to 160°C/140°C Fan/Gas Mark 3.
  2. Mix all the marinade ingredients together.
  3. Add the rest of the ingredients to a tray and pour over the marinade.
  4. Cook for 40 mins, taking it out half way through to baste the thighs with the sauce in the bottom of the pan.
  5. Enjoy!
