Loaded Olive Oil Dip

Fresh cucumber, radish, herbs, crispy bacon lardons, sun dried tomatoes and crunchy cashews all sitting in a mix of lemon infused olive oil, Irish peat smoked balsamic and black garlic balsamic. Perfect with warm bread on the side.

Ingredients:

  • 3 tbsp lemon infused olive oil
  • 1 tbsp Irish peat smoked balsamic
  • 1 tbsp black garlic balsamic
  • Crispy bacon lardons
  • 1 small cucumber, chopped
  • Handful of radishes, chopped
  • Small handful coriander, chopped
  • Small handful dill, chopped
  • Small handful mint, chopped
  • Sun dried tomatoes, chopped
  • Handful of cashews, roughly chopped
  • 1 small red onion, finely chopped
  • Flaky sea salt and black pepper

Method:

  1. Add the cucumber, radishes, herbs, sun dried tomatoes, cashews and red onion to a bowl.
  2. Pour over the lemon infused olive oil, Irish peat smoked balsamic and black garlic balsamic.
  3. Season with salt and pepper and mix well.
  4. Top with crispy bacon lardons.
  5. Serve with warm crusty bread and scoop up every last bit.
