Fresh cucumber, radish, herbs, crispy bacon lardons, sun dried tomatoes and crunchy cashews all sitting in a mix of lemon infused olive oil, Irish peat smoked balsamic and black garlic balsamic. Perfect with warm bread on the side.
Ingredients:
- 3 tbsp lemon infused olive oil
- 1 tbsp Irish peat smoked balsamic
- 1 tbsp black garlic balsamic
- Crispy bacon lardons
- 1 small cucumber, chopped
- Handful of radishes, chopped
- Small handful coriander, chopped
- Small handful dill, chopped
- Small handful mint, chopped
- Sun dried tomatoes, chopped
- Handful of cashews, roughly chopped
- 1 small red onion, finely chopped
- Flaky sea salt and black pepper
Method:
- Add the cucumber, radishes, herbs, sun dried tomatoes, cashews and red onion to a bowl.
- Pour over the lemon infused olive oil, Irish peat smoked balsamic and black garlic balsamic.
- Season with salt and pepper and mix well.
- Top with crispy bacon lardons.
- Serve with warm crusty bread and scoop up every last bit.
