Pavlova with Balsamic Blackberries
To celebrate winning ⭐⭐⭐ stars in the 2025 Great Taste awards, we made a Pavlova! ✨ Topped with fresh cream and summer berries, including some blackberries that we macerated in the Blackberry & Thyme Balsamic. Yum!
Ingredients:
For the pavlova:
- 4 large egg whites (room temperature)
- 225 g caster sugar
- 1 tsp white balsamic
- 1 tsp cornflour
- 1 tsp vanilla extract
For the topping:
- 300 ml double cream
- 2 tbsp icing sugar
- 200 g fresh blackberries
- A few sprigs of fresh thyme (leaves only)
- 3–4 tbsp blackberry & thyme balsamic
Optional garnish:
- Edible flowers (like violas or pansies)
- Extra thyme sprigs
Method
⭐Make the pavlova: Preheat oven to 120°C (fan). Whisk egg whites to stiff peaks, then gradually add caster sugar until glossy. Fold in vinegar, cornflour, and vanilla. Spoon onto a baking tray lined with parchment, shaping into a 20 cm circle with a slight dip in the middle. Bake for 1 hour 15 minutes, then turn off the oven and let it cool completely inside.
⭐Prepare the cream: Whip the double cream with icing sugar until soft peaks form.
⭐Macerate the blackberries: Toss the blackberries with 1–2 tbsp of blackberry & thyme balsamic. Set aside for 15 minutes to intensify the flavors.
⭐Assemble: Top the pavlova with the whipped cream, spoon over the balsamic blackberries, and drizzle extra blackberry & thyme balsamic for a glossy finish. Scatter thyme leaves and edible flowers for a celebratory look. Enjoy! 1 w
