Jammy and sweet Balsamic tomatoes are just what you need for a quick lunch, brunch, or light dinner. Cooked slowly in a pan with plenty of butter and a drizzle of Balsamic makes this dish incredibly moreish and one that works for every season!

Ingredients:
- Cherry tomatoes, chopped
- Cream cheese (we used Boursin)
- Balsamic Vinegar - we used Grande Reserve, but Black Garlic or Blackberry and Thyme infused Balsamic would also work well!
- 1 slice of bread, baked in the oven with some olive oil and salt until light golden/brown
- A square of butter
Method
- Fry the tomatoes in a pan with butter and a drizzle of Balsamic. Keep on a low heat until the tomatoes are soft and jammy.
- Spread cream cheese on toast and top with the tomatoes.
