This Salsa Verde is fresh, fragrant and goes well with steak, beef or game. Ideal to bring to barbecues, serve with Sunday roasts, or even stir into a salad.

Ingredients
Salsa Verde:
- 1 packet of parsley, finely chopped
- 1 packet of mint, finely chopped
- 2 tbsp Wild Garlic Infused White Condiment, or Irish Peat Smoked or Original would work well too!
- 2 cloves of garlic, for newly chopped
- 1 tbsp Dijon mustard
- 40g capers, finely chopped
- 200ml Extra Virgin Olive Oil
Lamb:
- Salt and pepper
- Lamb Steaks
- Olive Oil
Method
- Combine all the Salsa Verde ingredients and stir well until thoroughly mixed.
- Heat a griddle pan until hot enough to fry. Season the lamb and fry for 1-2 mins each side, depending on the thickness of your steak.
- Dress the lamb steaks with Salsa Verde and serve with potatoes and an assortment of veggies.
