Salsa Verde with Lamb Steaks

This Salsa Verde is fresh, fragrant and goes well with steak, beef or game. Ideal to bring to BBQs, serve with Sunday roasts, or even stir into a salad.

Ingredients

Salsa Verde:

  • 1 packet of parsley, finely chopped
  • 1 packet of mint, finely chopped
  • 2 tbsp Wild Garlic Infused White Condiment, or Irish Peat Smoked would work well too!
  • 2 cloves of Garlic, for newly chopped
  • 1 tbsp Dijon mustard
  • 40g capers, finely chopped
  • 200ml of good olive oil

Lamb:

  • Salt and pepper 
  • Lamb Steaks 
  • Olive Oil 

Method

  1. Combine all the Salsa Verde ingredients and stir well until thoroughly mixed
  2. Heat a griddle pan until hot enough to fry. Season the lamb and fry for 1-2 mins each side, depending on the thickness of your steak
  3. Dress the lamb steaks with Salsa Verde and serve with potatoes and an assortment of veggies
