Make the Salad:
Mix rocket, red onion, tomatoes, and Balsamic Pearls in a bowl.

Cook the Steak:
Season steak with salt and pepper. BBQ for 2 mins each side, then move to a cooler part for 2-4 mins (56°C for medium rare).

Rest & Slice:
Rest steak for 5 mins, then slice thinly.

Assemble your salad:
Toss salad with a glug of Grande Reserve, season, top with steak and Parmesan. Serve.
