Whipped Goats Cheese, Beetroot & Pistachio

This week, we're continuing the toast theme to bring you whipped goat cheese with sliced beetroot, a black garlic 🧄 balsamic glaze and topped with crunchy pistachios. A fresh, creamy, quick lunch with plenty of crunch!

Ingredients:

  • 2 cooked beetroot, sliced
  • a few slices of sourdough,baked in the oven until golden and crispy 
  • 2 tbsp sour cream
  • 2 tbsp goats cheese 
  • 3 tbsp Black Garlic Balsamic (Blackberry & thyme would also would work well)

Method

  1. In a saucepan, gently heat the Black Garlic Balsamic until it begins to reduce and becomes syrupy.
  2. Whip the goats cheese and sour cream together until smooth.
  3. Spread the whipped ghost cheese on the baked sourdough slice. Top with beetroot and pistachios and drizzle with the Black Garlic glaze.
  4. Enjoy!
