Balsamic Peaches and Cottage Cheese

Fresh and light, this one is perfect during the hot weather. Sweet and juicy caramelised peaches on creamy cottage cheese topped with zingy Balsamic Pearls and peppery rocket. Simple and delicious!

Ingredients:

  • 2 peaches, sliced
  • a drizzle of olive oil
  • a few spoons of cottage cheese
  • bread, baked in the oven with a little olive oil until golden
  • a handful of rocket
  • salt and pepper
  • parma ham or proscuitto
  • Blackberry & Thyme Balsamic Pearls
  • a handful of basil

Method:

  1. In a  hot pan, drizzle in a little olive oil, some balsamic (we chose raspberry but you can pick your favourite!), and then add your peaches. Fry them for about 30 seconds-1 min until they are caramelised then remove to let them cool.
  2. Spread cottage cheese on the olive oil baked bread, add peaches, some proscuitto, fresh basil and top with balsamic pearls. 
  3. enjoy!
