This recipe is super easy, packed with sweet rich, salty flavour, and makes the perfect side, BBQ addition or light lunch.

Serves: 2 as a side

Ingredients:
Whipped Feta:
- 230g feta
- 150g Greek yoghurt
- Zest of 1 lemon
- 2 tbsp Olive Oil
- 1 tsp Za'atar
Hot honey dressing:
- 1 chilli, red, finely diced
- 1 small handful of coriander, finely chopped
- 1 tbsp Blood Orange and Cardamom infused White Condiment (Irish Peat Smoked and Citrus varieties would also work well)
- 4 tbsp honey, runny is best
Balsamic onions:
- 2 red onions, roughly chopped
- Grande Reserve Balsamic
- Olive Oil
Method:
1. To start, heat the oven to 180°C/160°C Fan/Gas Mark 4. Put the onions in a roasting dish and drizzle with Olive Oil then season with salt and pepper. They should take around 30-40 minutes until soft. Take them out half way through and drizzle with Grande Reserve to allow for lots of crispy caramelisation.
2. While they are roasting, blend together all the ingredients for the whipped feta in a food processor or blender.
3. For the hot honey, mix all the ingredients together.
4. Once the onions are cooked served on the whipped feta and dress using the hot honey. You can serve it with flat bread to scoop up all that delicious flavour.
