Cauliflower Steak, Spiced Yoghurt & Stone Fruits

Ideal to serve as a starter or a main, cauliflower steaks have incredible flavour, made more intense by being charred over a BBQ.

Ingredients

Method

  1. Place the steak in a deep dish and cover with boiling salted water.
  2. Leave for 10 minutes then drain and pat dry.
  3. Season the steak generously and lightly brush with oil.
  4. Place onto a hot barbecue and cook for approximately 3 minutes per side until slightly charred.
  5. Make the spiced yoghurt by mixing in the citrus vinegar and the dried seasonings.
  6. Serve the cauliflower with the spiced yoghurt, fruit and nuts.
