Ideal to serve as a starter or a main, cauliflower steaks have incredible flavour, made more intense by being charred over a BBQ.

Ingredients
- 1 cauliflower, cut and trimmed
- Extra Virgin Olive Oil
- Salt, Wild Garlic & Peppermill
- 50ml natural yoghurt
- ½ tsp smoked paprika
- 5ml Citrus Infused White Condiment
- ½ tsp garlic powder
- ½ tsp cayenne
- Stone fruits & flaked almonds to serve
Method
- Place the steak in a deep dish and cover with boiling salted water.
- Leave for 10 minutes then drain and pat dry.
- Season the steak generously and lightly brush with oil.
- Place onto a hot barbecue and cook for approximately 3 minutes per side until slightly charred.
- Make the spiced yoghurt by mixing in the citrus vinegar and the dried seasonings.
- Serve the cauliflower with the spiced yoghurt, fruit and nuts.
