Chicken Pesto Salad
A scrumptious summer lunch! We had so much pesto left over from our Mushroom reel, we wanted to show other ways you can use it. This Chicken Pesto Salad is a favourite summer recipe, super simple and interchangeable with other veggies you might have in your fridge.

Prep time: 20 mins
Ingredients:
For the salad:
- 650g Chicken Breast, cooked through
- 1 packet of cherry tomatoes, sliced
- 1 whole cucumber, roughly chopped into chunks
- A big handful of spinach leaves
- Handful of chopped Basil
For the dressing:
- 1 tbsp Rocket and Walnut Pesto (see our previous mushroom recipe)
- 2 tbsp of Greek Yoghurt
- A squeeze of lemon

Method:
1. Mix all the salad ingredients together in a serving bowl
2. Mix all the dressing ingredients together in a separate bowl, then pour over the salad and mix well.
3. Enjoy!
