A fresh, zesty simple salad, topped with halloumi marinated in orange and basil. We threw in some toasted pine nuts from some nuttiness and an orange and honey dressing for extra citrus-sweet flavour.

Ingredients
For the Halloumi Marinade
- 1 block of halloumi
- Zest of 1 orange
- 1 heaped tsp honey
- 1 tbsp Blood Orange & Cardamom Infused White Condiment
- A handful of basil, chopped
- 1 tbsp Olive Oil
- Wild Garlic, Salt & Peppermill
For the Salad
- Large orange, peeled and segmented
- Fennel, finely sliced
- Pine nuts, lightly toasted
- Pomegranate seeds
- Handful of lettuce leaves
For the Dressing
- 1 tsp runny honey
- 1tbsp Blood Orange & Cardamom Infused White Condiment, Citrus would also work well
- 3 tbsp Extra Virgin Olive Oil

Method:
- Slice the halloumi and add to a bowl. Mix all the marinade ingredients and pour over the halloumi. For best results leave overnight.
- To cook the halloumi, heat a pan and fry the halloumi until brown on each side.
- Add the salad ingredients to a bowl and top with the halloumi.
- Mix the dressing ingredients and pour over the salad.
- Enjoy!
